Today was a beautiful sunshine filled day I was fortunate to be able to spend most of it outside with my pup. Let's be honest sometimes caring a camera around with you everywhere can sometimes take out some of the fun when you just wanna be carefree. So no photos from our adventures today, but don't you worry I am sure Mr. Blue will be making an appearance somewhere in this year. This evening I came home to begin the prepping of several delicious things I will be finishing whipping up tomorrow. Let's see...I am talking Caramelized Onion Jam, Braised Mushrooms, Lentils, Blanched Cauliflower, Roasted Butternut Squash, Seared Kale and Salmon. I love planning out ways to make food for the week that I can mix and match together to create multiple dishes! This will insure my week is filled with nutrition and of course flavor! Cutting up the 2 lbs of onions was the only part of this evening that really got to me...they made me cry so hard! I was dancing around in my kitchen making goofy faces and trying to shake off the tears. I was feeling reggae music tonight, cause then it helps me day dream that I am living right by the beach with a hammock waiting for me and warm ocean waters just outside...right? Don't tell me it's impossible cause I live in Oregon, cause in my mind I am free to go wherever I want!

Hi Everyone!

2012 is here and let's start it off right. May everyone's heart's be filled with delight. This year I am changing my "maybe I might'" to "I did it!" 2011 you were quite a doozy, mixed with some wonderful times and some well...not so snazzy times. All in all I am grateful to have enjoyed it and excited to get on with the next one. So bring it 2012!!!
